I’m not going to stick to tourist areas by any means and the bike will need to be able to handle rough roads and be easy to maintain without access to a mechanic.

Kawasaki KLR 650 is a fair choice. It has a 6.5 gallon fuel tank and mine gets about 37 miles to the gallon on the highway. You can look for a used one if you want to save money.

as long as you’re not hitting the freeways, parts should be available everywhere
Yamaha XT350 with a large Acerbis tank and a bash plate fitted, or if you want slightly more power look at an XT600. Fit spare cables on the same route as the working ones for easy transfer, take inner tubes and tyre levers, spare clutch and brake levers and spark plug – that and WD40 should get you out of simple situations. XT motors are generally bullet-proof and are bog standard air-cooled singles so easy to work on racks for fitting metal boxes are a good idea as they protect the bike in the event of a spill and can carry a mountain of stuff.
