I will be hiking. Once I get through Mexico…what should I do to get down all the way to San Jose’, South America?

You must be kidding, I hope you are.
Never leave the country without a passport. If you have to ask questions like these – you should not be making this trip. I suggest you read about the places you plan on ‘hiking’ through. Central America isn’t a park.
No passport? That sounds serious….
Anyway, I think you should address someone who has some similar experience. I recommend you to ask the same question on a good hiking and trekking forum, I am sure the guys there will find a solution for this .
