I have to get documentation and have an interview with USA embassy because of a drink/driving conviction to get safe entry for holiday. I’m not taking the risk of being refused entry. Does this cover just one trip or do I have to re-apply every time and go through the whole procedure again?

One generally applies for a single-entry tourist visa. There are multi-entry visas, but they require extra documentation and it might not be a good idea to apply for one in your case – at least not this time.
Realize that Visa Officers’ concerns are:
The applicant will use the tourist visa to illegally live/work in the USA.
The applicant will commit crimes in the USA.
The applicant will become a burden on society.
