I live in Canada, and want to know how to set up my own foundation/company that will offer motivational speaking, feed less fortunate families at holiday time, offer disaster volunteers, and provide mentoring. How can I create this company from the vision in my mind?

Jeff,
I would suggest talking with some existing organizations. Are you thinking about a worldwide organization? Just North America? Just Canada?
Other than that, I can only say that my heart aches for the homeless, too. I am trying to figure out what I can do for them in the Chicago area.

My best suggestion, as a friend of mine just set up something along these lines here in the states is to talk to a financial planner or an accountant and then take it to the lawyer and get them to brainstorm to make it happen.
Could be a costly venture, but it’s best to do it right and legally then to have it working and bam you get hit with all sorts of bad things.
