I am planning on going on a Caribbean cruise in May, and have been told to avoid school / college holidays so that its less crowded and cheaper!

May is very late for school holidays in the US. Most colleges and some schools dismiss for the year in May. The rest of US schools that don’t operate year-round close for summer in June.
