Just back from Santorini, and I consider it the most beautiful Greek Island I have seen.
Mykonos is fine as well.
If you want a small, quite and more natural Island you could try Kithira or Karpathos.

If you are going with your mother, then I definetely recommend that you go to Crete. You can stay in Chania, a beautiful city with a port. The people are friendly. It’s not a party island. The island is huge so you don’t feel trapped.
Beaches: Balos, falasserna, Elafonisos, Sfakia, all amazing
Cities for dining, clubbing, caffe: Chania, Herakleo and Rethymnon (all beautiful)
You can also go check out the Palace at Knossos, famous in Bronze age archaeology.
And of course, you have to go to Athens and visit the Acropolis and the Archaeology museum.
The islands are beautiful, but limited whith what you can do.
