I am looking for a very low budget short trip (7-10 days) in Europe, maybe a ski trip, maybe a working holiday (fruit picking, campsite helpers etc), in middle March. Any suggestions? Many thanks.

Where in Europe? Europe is as large as all 50 states of the United States.
Where are you traveling from? The gaps in your question tell me you are American, but different places in the USA would have dramatic differences in airfare to/from most of Europe.
What is your idea of low-budget? Two-star hotel, hostel, or campground?
You said you are a student (irrelevant) but not your age. You cannot travel alone around Europe if you are not at least 18 years of age. Many hotels and hostels can and do have higher age restrictions. You cannot rent a car until you are at least 25 years of age.
Try to remember that most of Europe is still very cold in March; when I went to the Black Sea last March there was still snow on the ground. Fruit picking in March??? Not in the Northern Hemisphere! Also remember that while you don’t need a visa to visit most of Europe, you DO need a work permit to earn any money.
