We will be staying in an all inclusive hotel but would like to eat out in different restaurants most nights. Will be going shopping but not serious shopping. Just browsing and maybe buying a few small souvenirs. Maybe a few nights out.

Considering your hotel is all inclusive you wont need as much. In europe the most expensive things are the hotels and the food. I would say for about a week if you want to eat out a couple of times(3 or4) and do some small shopping i would say about 300-400 dollars. Just a tip i learned while in spain,some restaurants have what they call bar specials, which means the Special is only good at the bar not in the restaurant itself. The foods the same and still good but its alot cheaper because they give you the Special of the day and you eat at the bar.(not that bad though)
