Russia Close-Up: between Europe and Asia

South UralsRussia’s Chelyabinsk Region, located on the border between Europe and Asia in the southern Ural Mountains, still has a long way to go to become a mainstream holiday spot. But thought it lacks a developed tourist infrastructure, the region offers plenty of maiden forests and wilderness of the real Russia.

Hennepin Technical College’s Eden Prairie branch was abuzz with holiday excitement Dec. 8 when the college╒s culinary department hosted an evening of food and fun. The program was designed to teach how to entertain elegantly without spending a large amount of money. The presentations were given by instructors in the culinary program. Here is a sampling of the recipes they made available: Dilled Shrimp with Lemon Butter Canapes 1 lb. cooked salad shrimp (100-200 count size) 1/2 cup butter 1/2 tsp. lemon zest, finely grated 1 lemon juiced 1/4 tsp lemon pepper 36 Melba round crackers 4 Tbsp. mayonnaise 2 tsp. fresh dill, finely chopped Dash Worcestershire sauce Take softened butter and add lemon zest, lemon pepper and half the lemon juice. Mix well and set aside. Thaw salad shrimp if frozen. Squeeze out liquid fro shrimp and discard. In a bowl, mix shrimp, mayonnaise, finely chopped fresh dill, juice from half of lemo and Worcestershire sauce. Spread melba rounds with lemon butter neatly. Arrange shrimp on top of lemon butter. Garnish with fresh dill. Asian Style Wings and Peanut Sauce 2 1/2 pounds chicken wings 1 cup teriyaki sauce, divided 1 Tbsp. brown sugar 2 tsp. curry powder 4 cloves garlic, minced 1/4 cup peanut butter 1 Tbsp. rice vinegar In a 9×13-inch baking dish, stir together 3/4 cup teriyaki sauce, brown sugar, curry powder and three cloves of minced garlic. Would be nice to stand at the Euro-Asia border. Don’t know that it’d be much “fun”. This seems like a tourism piece for an area of Russia not really ready for tourism! Ann Smith very natural; Russian girl’s presentation comes off a bit too phony. Still, interesting report – maybe I’ll make it there one day
