Starting in Cape Town to Tanzania and wondered if it is best done on my own or with a budget overland tour group

Depends what you like. If you prefer for someone else to plan your travels, go with an overland bus group. It’s probably a bit more expensive, but you wont have to think much about where to go, where to stay, etc.
If you prefer to travel independently, you should have no problem going overland using local trains and buses. All the capitals are well connected and very well traveled by bus.
Get a copy of Lonely Planet for Southern and East Africa, as well as a Rough Guide or one of the others and just don’t lose them. They list loads of bus companies, hotels at any price level and quality, time to get from one place to another, etc.
I think the independent sort of traveling is more rewarding, but if you’ve never been to Africa or traveled in a poor country before, you might prefer the tour.
